- Elegant and juicy at once, with a silky density that caresses the palate. The structure is clearly defined, the body precisely drawn. The warmth of the vintage reveals itself in a rounded fullness, yet is kept in check by a pleasant tension. Citrus notes and a hint of pineapple meet that characteristic gunflint minerality, which has a slightly prickling quality. The wood is well-integrated, the length impressive. A village wine that, through the assemblage of young and old vines as well as different soil types, authentically reflects the character of Chassagne-Montrachet.

- Terroir & Origin
- The centrepiece is the parcel Les Houillères (planted 1989 with Sélection Massale), complemented by grapes from En Journoblot and declassified Premier Crus – nine parcels in total. Les Houillères sits on flat, deep soils of red clay-limestone mixture, an extension of the renowned vineyard site Les Enceignères. This early-ripening parcel is traditionally harvested first.
- Grape Variety & Vinification
- 100% Chardonnay, fermented with indigenous yeasts in a combination of neutral barrel and tank. The malolactic fermentation occurs spontaneously, the wine matures on the lees without bâtonnage. Approximately 20% new oak, minimal sulphuring (maximum 35 mg/l) only in the final six months – an approach that maximises purity and terroir expression.

- Scallops with butter sauce, lobster or langoustines, turbot in champagne sauce, poultry in cream sauce, mature Comté or Beaufort.
