In the glass

  1. Colour

Luminous cherry red with slight transparency.

  2. Nose

Juicy, crisp notes of lingonberries and sour cherries, alongside elderberry, earth, peat, a hint of fluffy chocolate cake and a sprig of juniper.

  3. Palate

Powerful, juicy and vibrantly fresh with red, crisp fruit, black berries as well as earthy, savoury-bitter and nutty nuances – no wood, just freshness and a fine smoky streak.

  4. Character

A taut, robust and honest old-school Sangiovese: acid-driven, full of energy and with cool mountain freshness rather than opulence.

  5. Pairing

Pasta with tomato sauce and pecorino, Tuscan grilled pork or mature pecorino cheese with honey.

  6. Notes

Spontaneously fermented and aged in stainless steel, from an organically certified vineyard with iron-rich brown earth and limestone – the extreme altitude of Monte Amiata with its cool nights lends the wine its vibrant acidity and fine minerality.

Tasting note

Colour & appearance
Bright cherry red with slight transparency – a wine that signals in the glass that freshness takes precedence over concentration.
Nose
Fragrant and crisp: cranberries and sour cherries meet elderflower, a hint of earth and peat, alongside an almost playful touch of chocolate cake and a juniper sprig that lends the fruit a piquant, green edge.
Palate
Intense, juicy, vibrant. Red, crisp fruit is interwoven with a few black berries, earthy and finely bitter as well as nutty notes. No wood, no jam – instead taut acidity, some smoke and an honest core that recalls old-school Sangiovese. The drinkability is remarkable.
Finish
Cool and clear, with an almost mineral, blood-like note suggested by the volcanic terroir of Monte Amiata. The wine stays fresh for a long time and ends with piquant bitterness rather than sweet warmth.
Terroir & origin
Monte Amiata, a volcano dormant for 180,000 years, is the highest peak in southern Tuscany at 1,738 metres. The vines for the “K” stand at 550 metres altitude in iron-rich brown earth with limestone. Cool nights and temperature swings of up to 20 degrees between day and night preserve the grapes’ acidity and aromatics – conditions that show Sangiovese from its energetic side.
Grape variety & vinification
Pure Sangiovese, spontaneously fermented and aged in stainless steel. Sebastian Nasello – formerly cellar master at Podere Le Ripi in Montalcino – and Ugo Fabbri deliberately forgo new barriques. The “K” is the Sangiovese counterpart to the “KAB”, which is bottled from Cabernet.
Food recommendations
A wine for the table, not for the pedestal: pappardelle with wild boar ragù, grilled bistecca, pizza with finocchiona or simply pecorino and smoked sausage. Slightly chilled, it shows itself at its best.
Special features
Bakkanali was founded in 2021, is organically certified and produces only around 25,000 bottles a year. The “K” represents the new generation of Tuscan wines: elegance instead of opulence, high-altitude freshness instead of Brunello weight – and at a price that allows everyday enjoyment.
