Wine Description for Hipping Kabinett Grosse Lage 2023 by Schätzel
- Colour & Appearance
- Clear straw yellow with lively green reflections – a youthful Riesling that announces its freshness already in the glass.
- Nose
- Wild and exuberant, this Kabinett presents itself in its youth. The reduction still marks it distinctly, flint and gunpowder dominate mineralically. The fruit holds back, oscillating between yellow and green tones: yellow apple, khaki, lime and mirabelle plum. Particularly fascinating are the intense herbal notes – sage, oregano and marjoram in dried form, plus a hint of mint and sencha tea, which lend the wine vertical complexity.
- Palate
- Here the Hipping reveals its true class: A fine, precise acidity carries the wine like a thread through it all. It dances elegantly across the tongue, pushing forward energetically without ever becoming intrusive. Stimulating bitter compounds provide tension. The fruit retreats completely – no upfront sweetness, despite the Kabinett designation. This is contemporary Riesling with character: the Rote Hang shows itself pure, carefree and light-footed at just 7.5% alcohol.
- Finish
- Clear, mineralic and of impressive length. The saline minerality of the Rotliegend lingers on, accompanied by fine herbal notes. A wine that invites you to take the next sip – great elegance with playful lightness.
- Terroir & Origin
- The Hipping counts among the legendary vineyard sites of the Rote Hang in Nierstein. The red Rotliegend soils of Permian sandstone fundamentally shape the character of this Grosse Lage – mineralic, spicy, complex. Kai Schätzel masterfully understands how to bring this terroir transparently into the bottle.
- Food Pairing Recommendations
- This light-footed Kabinett shines with Asian cuisine, such as Vietnamese summer rolls or Thai salads. Perfect also with goat’s cheese, trout with herbs or simply with asparagus dishes. The herbal spice harmonises wonderfully with Mediterranean appetisers.
- Special Features
- At just 7.5% alcohol, a prime example of modern, easy-drinking Kabinett style. Despite the residual sweetness, the wine tastes dry and taut – a balancing act that bears Schätzel’s signature. Already accessible now, but will gain further complexity over the next 5-10 years.
