Tasting note
Character
An aristocratic, purist Pinot Noir of remarkable transparency and intellectual depth. This vintage reveals the unvarnished truth of the terroir: free from cosmetic oak, supported by a delicate texture, silky tannins and a dance-like freshness. The uncompromising approach without added sulphur bestows the wine with a vibrant, unadulterated vitality and a rare stylistic clarity.
Terroir & Origin
Hailing from the Premier Cru site Les Lavières in Savigny-lès-Beaune, shaped by the limestone-rich soils of the Côte de Beaune. Brother and sister François and Claude de Nicolay farm their vineyards completely biodynamically according to strict Demeter certification guidelines. The soil here is still cultivated traditionally using four in-house horses to prevent compaction and preserve the microbial life of the plots.
Grape Variety & Vinification
100% Pinot Noir. In the estate’s cellar, a historic 12th-century Cistercian vaulted cellar, they rely on a gentle whole-bunch fermentation. Vinification takes place unfiltered and, in the case of the »Sans Sulfites Ajouté« cuvée, strictly without the addition of sulphur. Ageing in wooden casks is restricted to a minimal proportion of new oak, so as not to mask the fine fruit structure and mineral identity of the Premier Cru.
Food Pairings
Pairs exquisitely with classically prepared pheasant breast, tender pink-roasted saddle of venison or a guinea fowl leg braised in its own juices. This delicate red wine also demonstrates its stylistic class alongside a fine mushroom risotto with autumn truffles or aged Comté.
