Wine Description for Sauvignon Blanc Dry 2024 from Ökonomierat Rebholz

Colour & Appearance
Pale lemon yellow with luminous green reflections – youthful, clear and inviting in the glass.
Nose
Here the most expressive estate wine from Rebholz reveals its green side: pyrazine, nettle and box meet exotic notes of prickly pear and gooseberry. These are joined by refreshing hints of verbena and bitter lemon – an aromatic fireworks display that could hardly be more characteristic.
Palate
This Sauvignon Blanc presents itself as remarkably juicy and quaffable on the palate. The rounded acidity and subtle 2.3 g/l residual sugar create a perfect balance. Ripe green notes harmonise with yellow fruits such as pear and carambola, complemented by nuances of aroma hops and blackcurrant. Lemon and lime dominate the foreground, whilst the chalky-mineral structure combined with vibrant acidity provides remarkable energy. With just 11.5% alcohol, the wine displays impressive lightness and wonderful drinkability.
Finish
Fresh, mineral and persistent with citrus-driven precision.
Terroir & Origin
Hailing from the Palatinate, this Sauvignon Blanc benefits from the distinctive terroir of the renowned estate Ökonomierat Rebholz, which is known for its precise, terroir-focused wines.
Grape Variety & Vinification
Produced biodynamically according to respekt-BIODYN standards and hand-harvested. Following careful sorting, an extended skin contact period with natural sedimentation was employed for pre-clarification. Spontaneous fermentation and maturation in stainless steel preserve the varietal freshness and aromatics at 6.9 g/l acidity.
Food Pairing Recommendations
An excellent companion to goat’s cheese, asparagus with hollandaise sauce, scallops, sushi and sashimi, green salad with herb vinaigrette or pan-fried monkfish. Also an excellent choice with Thai curries and Vietnamese summer rolls.
Special Features
A textbook biodynamic Sauvignon Blanc that combines varietal typicity with Palatinate precision. The deliberately low alcohol content underscores the modern, approachable style – a wine that unites substance with elegance.
