Wine Description for Rosé Extra Brut 2021+Res. Chouilly Grand Cru by Vazart-Coquart & Fils

Colour & Appearance
Intense wild raspberry red with elegant, fine perlage – a rosé Champagne that promises sensuality from the very first glance.
Nose
Captivating and fruity: wild berry preserve, ripe raspberries and wild strawberries meet vineyard peach and oranges. Beneath shimmer creamy notes of vanilla and crème brûlée, whilst a hint of crushed stone alludes to the origin from Grand Cru chalk soils.
Palate
Juicy, sensual, complex. The present red fruit combines with stony and herbal accents, a subtle tannin and a trace of tobacco. Ripe peaches, raspberries, blood oranges and mandarins dance with notes of warm pastry. The dosage of 6 grams is perfectly integrated – present, but never intrusive.
Finish
Here the true greatness reveals itself: The stony minerality of the belemnite chalk elegantly frees itself from the fruit and sets a cool, precise counterpoint. Length with tension – that is genuinely enjoyable.
Terroir & Origin
Grand Cru from Chouilly, one of Champagne’s finest Chardonnay terroirs. The eleven hectares are rooted deep in belemnite chalk, the Chardonnay vines average 45 years of age. Biodynamically certified since 2020.
Grape Variety & Vinification
92% Chardonnay, 8% Pinot Noir. 60% base vintage 2021, 40% from the réserve perpétuelle maintained since 1982 – a solera system that guarantees depth and complexity. Fermentation in stainless steel with malolactic fermentation, bottling May 2022, disgorgement November 2024.
Food Pairing Suggestions
Salmon tartare, pan-fried scallops, rare roasted veal fillet with porcini mushrooms, strawberry and rhubarb desserts or simply on its own as an aperitif of the highest class.
Special Features
A rosé Champagne with soul: The combination of old vines, biodynamic approach and the decades-old reserve wine tradition makes this Extra Brut an authentic, characterful Grand Cru with remarkable depth.
