Tasting note
Character
An uncompromising sparkling wine of purist clarity and deep mineral structure. With its moderate 11.5% vol. alcohol and zero corrective dosage, this Brut Nature Reserve shows itself as extremely taut, focused and driven by a vibrant freshness. Years of ageing bestow upon this Riesling a complex, mature texture without stripping away its crystalline core character. A masterful example of how Mosel Riesling can be interpreted as fine sparkling wine craft.
Terroir & Origin
The grapes originate from the extremely steep sites around Pünderich in the Mosel region, dominated by the legendary Marienburg. This terroir is famous for its complex slate soils in red, grey and blue varieties. Deep-rooting vines – farmed for decades without chemical herbicides and according to strict biodynamic guidelines (Demeter) – absorb the mineral essence of the rock. The cool climate of the Mosel Valley gives the 2013 vintage its racy acidity structure, serving as its stylistic backbone.
Grape Variety & Vinification
Naturally, Riesling brings the ideal acidity and site definition required for sophisticated sparkling wines. The signature of Clemens Busch remains unmistakable even in the realm of sparkling wine: patience and minimal intervention take centre stage. The base wine reflects the house’s traditional cellar philosophy, which includes working with indigenous yeasts and careful, gentle maturation. By foregoing any sweetening dosage at disgorgement, the sparkling wine remains bone dry, unmasked and carries its rocky minerality straight to the palate without distraction.
Food Pairings
Thanks to its bone-dry nature and focused acidity, this Reserve sparkling wine is ideally suited as an elegant aperitif or a versatile food companion. It pairs magnificently with fresh oysters, delicate sashimi variations or crustaceans. It equally enhances poached freshwater fish with lemon butter, creamy goat’s cheese, as well as delicate starters featuring herb salad.
