In the glass

  1. Colour

Elegant mauve hue with delicate apricot reflections and a medium-intensity, lively mousse.

  2. Nose

Fine cherries and berries, accompanied by herbal notes, blossoms and apricots – extremely finely structured, refined and inviting.

  3. Palate

Red and juicy yellow fruit intertwines with invigorating spice, a fine bead and gently saline undertones.

  4. Character

A precise, finely structured Winzersekt with Burgundian elegance and volcanic minerality – dry, invigorating and of subtle complexity.

  5. Pairing

Ideal as an aperitif, with delicate starters such as salmon tartare or goat’s cheese crostini, as well as with refined fish dishes or white poultry.

  6. Notes

First disgorgement in January 2026 with only 4 g/l dosage – a particularly lean, precise style. The volcanic soils of the Kaiserstuhl and the winery’s gravity-flow principle shape its fine minerality and gentle vinification.

Tasting note

Colour & appearance
A delicate mauve pink with apricot reflections fills the glass, traversed by a moderately vigorous, lively mousse that rises in fine chains, visually heralding the precision of the estate.
Nose
Initially cherry and red berries, then an unexpected herbal note that lends structure to the whole. Blossom and apricot emerge, finely chiselled and elegant, never intrusive – a bouquet that whispers rather than shouts.
Palate
Red fruit meets juicy yellow fruit notes, an inviting spiciness and that finely textured mousse which carries the hallmark of the Kaiserstuhl. Delicate salty hints provide tension, whilst the low dosage of 4 grams ensures clarity and length.
Finish
Dry, precise, with lingering mineral freshness – a finale that makes its volcanic origins palpable without stating them loudly.
Terroir & origin
The grapes hail from the Kaiserstuhl, that volcanic island in the Baden Rhineland which Friedrich Keller regards as “Baden’s Burgundy”. Six VDP Grosse Lagen form the backbone of the estate; the mineral signature of the volcanic rock also shapes this sparkling wine.
Grape variety & vinification
Pure Spätburgunder, vinified following the Burgundian model that has guided the house for generations. The terraced winery operates according to the gravity principle – gentle handling of the harvest without pumps. First disgorgement in January 2026, granting this 2021 vintage remarkable maturation on the lees.
Food recommendations
A sparkling wine for the opening course: with grilled langoustines, salmon tartare or a light vegetable terrine. Even enjoyed on its own before a meal, it demonstrates why Restaurant Schwarzer Adler has held its Michelin star for over five decades – these wines are made for the table.
Special features
More than 55 years of uninterrupted Michelin-starred cuisine under their own roof have taught the Kellers what a sparkling wine must deliver: not to dominate, but to refresh, to provide structure and to whet the appetite for the first bite. The late disgorgement gives this rosé a depth that sets it apart from ordinary apéritif sparklers.
