Colour & Appearance
Hazy apricot with fine, lively mousse – the natural Méthode Ancestrale reveals itself here in all its unadorned beauty. A Pet Nat that doesn’t deny its origins.
Nose
Juicy and inviting: mirabelle plums, oranges and ripe apples dominate initially, accompanied by wine yeast and a hint of ginger. With air contact, floral aromas, hay and subtle anise unfold – an aromatic kaleidoscope that promises pure drinking pleasure.
Palate
Delightfully juicy with fine fruit sweetness and creamy texture. Invigorating citrus fruit meets yeasty freshness, whilst a peppery tannin structure provides tension. At just 10.5% alcohol, a playfully light wine that invites you to keep drinking – dangerously good!
Finish
Refreshing and engaging with lingering citrus notes and fine yeasty spice. Not a monumental finale, but a charming fade that immediately calls for the next sip.
Terroir & Origin
Sankt Laurent from mica schist on Lake Neusiedl – an unusual combination that gives this Pet Nat its mineral freshness and structure. Burgenland shows its experimental side here.
Grape Variety & Vinification
100% Sankt Laurent, hand-harvested in early September. Whole bunch pressing and spontaneous fermentation using the Méthode Ancestrale – the bottle fermentation is left without disgorging, which gives the wine its natural haze and vibrancy.
Food Pairing Suggestions
Perfect with evening snacks, cold cuts and cheese boards. Also a delight with flammkuchen, quiche or light summer dishes. Works brilliantly as an aperitif and accompanies convivial gatherings well into the night.
