  4. Character

A profound, unfiltered terroir wine with immense presence and structure, which benefits from air in the glass or a decanter.

Tasting note

Colour & Appearance
Slightly hazy golden yellow.
Nose
Compact and intense on the nose. Ripe pear and quince emerge, backed by subtle yeast, roasted almonds, white blossoms, as well as fresh grasses and meadow herbs.
Palate
On the palate, the wine presents itself with juicy richness, noticeable grip and a compelling texture. The mineral and saline length gives a precise structure to the dense fruit.
Terroir & Origin
Sourced from the winery’s coolest, north-east-facing vineyard sites close to the forest in Velm-Götzendorf (south-eastern Weinviertel). The grapes ripen slowly on limestone-sandstone soils, thereby retaining their natural freshness.
Grape Variety & Vinification
Blend of 62% Welschriesling and 38% Chardonnay. Hand-harvested on 29 September and spontaneously fermented using indigenous yeasts. The Welschriesling is fermented as whole bunches in amphorae and aged in 500-litre casks; the Chardonnay is whole-bunch pressed and aged in old NUMEN casks. Bottled without fining or filtration, with just 1.4 g of residual sugar.
Food Pairings
Benefits enormously from aeration and demands a carafe. Ideal with pan-fried char, braised brisket of veal, poultry dishes or mature aperitif cheeses.
Particularities
A puristic wine of origin from Johannes Zillinger’s Demeter-certified estate. The combination of Georgian-inspired amphora fermentation for the Welschriesling and wooden cask ageing for the Chardonnay creates a profound, unfined and unfiltered natural wine brimming with grip and individuality.
