Nose
The nose of the 2016 Pajoré Barbaresco by Sottimano gives a mineral promise framed by red-fruited tartness. Garnished with ripe cherries, laurel and cedar along with ethereal top notes of mild spices, sandalwood and white pepper, it is compact and closed on the nose. Large glasses and patience are important companions here.
Mouth
Delicate and dense with a minty overtone, the acidity sets the pace at a good 160 bpm and stretches wide across the taster's palate. Escorted by youthfully tight and ripe tannins, the gustatory corset of the Pajoré is enormously tightly laced. An immensely closed, almost monolithic wine that flows with dark fruit and spicy notes of tobacco, leather and cedar into the long, mineral and chalky-cool finish. Enjoyed young, it should be decanted, upside down, preferably at midday. Or just put it away for 15 years.
