Wine Description for Aus den Gärten Riesling Federspiel Dry 2022 from Nikolaihof

Character
Nikolaihof counts among Austria’s biodynamic pioneers and has been managed according to Demeter guidelines since 1971 – a winery with deep philosophical roots. This Federspiel Riesling from the estate’s own vineyards embodies the accessible side of Wachau Riesling art: light-footed with just 11.5% alcohol, yet precise and characterful. The designation “Federspiel” stands in the Wachau for medium-weight, elegant wines between 11.5 and 12.5% – named after the art of falconry, a poetic reference to lightness and finesse.
Terroir & Origin
The Wachau, this UNESCO World Heritage site along the Danube, offers ideal conditions for Riesling: steep terraces on primary rock soils and loess, cool nights thanks to the river’s influence and warm days from Pannonian influences. Nikolaihof, documented since 985, manages its vineyard sites with uncompromising connection to nature – without herbicides, pesticides or chemical fertilisers. This philosophy imbues the wines with a distinctive vitality and transparency.
Grape Variety & Vinification
Riesling reveals its mineral, crystalline side in the Wachau. Biodynamic management at Nikolaihof promotes vibrant acidity structures and a distinctive texture. The moderate alcohol content underscores the wine’s drinkability and makes it an ideal companion for many occasions. Vinification follows traditional principles with spontaneous fermentation and the avoidance of oenological interventions – an expression of terroir, not a recipe.
Food Pairing Suggestions
A versatile food companion: excellent with freshwater fish such as Danube trout or char, with asparagus and hollandaise sauce, with Wiener Schnitzel or roasted chicken. The vibrant acidity also harmonises beautifully with Asian cuisine, such as Thai curries or sushi. Equally lovely with goat’s cheese or simply as an aperitif.
