Wine information
The Tokaji Furmint Sec 2020, a masterly blend of predominantly 88% Furmint and a small portion of 12% Hárslevelű, originating from several characteristic growing areas, including Percze, Lapis, Suba, Betsek and Henye. The grapes, finely processed according to biodynamic practices, were harvested between 14 and 22 September 2020. Slow pressing and spontaneous fermentation in Slavonian oak barrels produced a wine with 12% alcohol, 6.3 grams of residual sugar and 8.1 grams of acidity at a pH of 2.84.
Color
The eye is delighted with a medium straw yellow.
Nose
The Tokaji Furmint is characterised by its elegant complexity, which is expressed in an invigorating bouquet of almond and finest pastry notes. Fruits such as ripe pear, quince, apple and plum join in to create a smooth, soft profile. Nuances of black tea, malt, chamomile and ginger create a light and airy mood that is, however, less intense than its predecessor.
Palate
The 2020 Furmint Sec surprises at first with its velvety softness before revealing its strong acid note, which was hardly to be suspected in the bouquet. The balance between 8 grams of acidity and 6.3 grams of residual sugar creates a tension that keeps the cuvée in a harmonious equilibrium. The subtle sweetness is dominated by a ripe citrus-like acidity that pierces through the rich stone fruit. Underpinning this sensation is a fine extract and energetic mineral notes. Despite its youthfulness, the Furmint Sec already shows impressive character and complexity.
Recommended dishes
As a companion for the Tokaji Furmint Sec 2020, versatile dishes are recommended due to its balanced profile, such as a couscous with apricots and dried plums, orange duck breast on potato pancakes or braised pork belly slices, refined with a sauce of fermented soy bean paste and ginger.
