Tasting note
The grapes for the Aurora grow in the Contrada Caselle in the municipality of Milo on the eastern flank of Mount Etna at 750 metres above sea level. Labelled Etna Bianco Superiore, it consists of 90% Carricante and 10% Minnella bianca.
The name Aurora refers to the small, graceful butterfly on Mount Etna, which is also depicted on the label (and is threatened with extinction). For this reason, all work in the vineyard is carried out exclusively by hand and with natural preparations. The wine is moved and bottled by gravity according to the phases of the moon. The vineyard was planted in 2010 and 2015 with a density of 7800 vines/ha in the Albarello with chestnut stakes. Harvested in the second half of October, the grapes are pressed directly and then sedimented for around 30 hours. Fermentation takes place spontaneously with a pied de cuve in stainless steel. The average annual production is around 10,000 bottles.
Color:
Straw yellow with bright reflections.
Nose:
The 2022 Aurora from I Vigneri di Salvo Foti is floating and very vinous with immense calm and balance. Delicate citric impressions combine with yellow pears, quinces and a little beeswax. Ethereal notes of camomile and lime blossom hover over everything in the top note, while sage and aniseed provide the tart finish.
Mouth:
The attack is also characterised by great calm, which reveals a certain flow on the palate with increasing aeration - down the throat! The ripe, fine acidity stretches across the palate like an electric eel, accelerated by the volcanic, smoky minerality that gives it its smoky saltiness and fine extract. With a slender 11% volume, a more than unrepentant pleasure
Food pairing suggestions
- Stuffed courgette flowers with ricotta, herbs and anchovies (Vegetable & Vegetarian)
- Pickled anchovies with vinegar and parsley (fish)
- Crispy wings alla Diavolo(poultry)
