Tasting note
Colour & Appearance
Intense straw yellow, laced with an exceptionally fine, persistent perlage.
Nose
An olfactory statement of tremendous finesse: four years of lees ageing reveals noble notes of finest patisserie, almond cream and puff pastry. Beneath this pulses the crystal-clear fruit of Chenin Blanc with accents of lemon, grapefruit and pear, underpinned by cool graphite, fresh herbs as well as a limy, chalky minerality.
Palate
On the palate, this Zéro Brut presents itself focused, pure and with a silky texture. Its Champagne-like elegance combines with the substantial dynamism of old vines. Nuances of yellow pome fruit, stone fruit and rich nuts are carried by a taut, varietally typical acidity. A sparkling wine of impressive depth and energetic drive.
Finish
The finish showcases its uncompromising origin: long-lasting, remarkably dry and leaving a mouth-watering saltiness on the tongue.
Terroir & Origin
The grapes ripen on the sheltered steep slopes of the Corniche Angevine above the Loire. Here, the vines are deeply rooted in poor soils of green and purple schist, interspersed with volcanic rock (spilite, phtanite) and quartz. This naturally restricts the yield to around 45 hl/ha and imparts an uncompromising texture to the base wine.
Grape Variety & Vinification
Single-varietal Chenin Blanc harvested in the first half of September 2019. Following gentle whole-cluster pressing and spontaneous fermentation, this sparkling wine matured from February 2020 for a full 48 months on the lees in the cool tuffeau cellars of Saumur. Disgorgement took place as a purist Zéro Brut without dosage.
Food Pairings
A magnificent partner for oysters, crustaceans, pan-seared scallops or aged Comté.
Special Features
Crafted by hand and produced naturally in a Demeter-certified estate. Former chemist Liv Vincendeau strictly dispenses with any dosage and gives this Crémant far more time on the lees than legally required – for a terroir-driven result on par with Champagne.
