Tasting note
Character
A Chardonnay of crystalline purity, masterfully structured and characterised by cool elegance. This wine is by no means loud, impressing instead with its saline vein, taut acid tension and delicate finesse. The generous Jeroboam format (3000ml) allows this 2022 vintage bottling an even slower, protected maturation, maximising its future ageing potential.
Terroir & Origin
The grapes hail from eastern Chablis, from one of the region’s most fascinating single vineyards: the Clos Béru. This five-hectare monopole site sits at an altitude of around 300 metres, sheltered by a historic 13th-century wall. The soil is dominated by Kimmeridgian limestone, interspersed with million-year-old fossilised oyster shells. This combination of elevation, microclimate and fossilised seabed endows the wine with its striking mineral identity.
Grape Variety & Vinification
Under the stewardship of Athénais de Béru, the estate is managed strictly biodynamically (Demeter certified). The soils are gently ploughed with horses to safeguard soil microbiology. Crafted from pure Chardonnay, wild-yeast spontaneous fermentation and minimal intervention in the cellar yield an unadorned single-vineyard wine. Traditional oak barrel maturation serves purely to provide structure, without masking the primary terroir expression.
Food Pairings
Thanks to its pronounced minerality, this structured white wine pairs superbly with oysters, a fresh seafood platter, steamed turbot or creamy sweetbreads. It equally enhances the enjoyment of mature Comté.
