Tasting note
Colour & Appearance
Vibrant amber with a silky-matte sheen.
Nose
An almost cheekily decadent abundance of Sicilian essence pours from the glass: intense notes of mandarin blossom, orange peel, candied citrus fruits and apricots, underpinned by pineapple caramelised in salted butter. Behind this lies a maritime component reminiscent of a warm sea breeze, accompanied by sea shells and plenty of lemon curd.
Palate
On the palate, the Passito is lusciously sweet with a silky-creamy texture. A tart burst of citrus oils, green mandarins, orange zest and lemon blossom water meets a salty structure and a subtle hint of smoke. Despite its intensity, the wine maintains complete balance.
Finish
Evoking memories of a generous spoonful of quince jelly on salted-buttered brioche braid, this elixir glides into a long, complex finish.
Terroir & Origin
The grapes hail from the historic heartland of Zibibbo viticulture on the volcanic island of Pantelleria. The south-west facing Bukkuram plateau (“father of the vineyard”) offers the vines extremely dry, sun-drenched conditions. Sebastiano de Bartoli continues the legacy of his father Marco here.
Grape Variety & Vinification
Single-varietal Zibibbo from extremely low-yielding, free-standing bush vines trained in the UNESCO-protected Alberello Pantesco system. A portion of the harvest is dried for two weeks in the scorching mid-August sun to form natural raisins, whilst the remainder ripens on the vine until September. After pressing and spontaneous fermentation, the dried berries macerate in the must for three months. Maturation takes place for a minimum of six months in wooden casks and stainless steel tanks.
Food Pairings
Outstanding with blue cheese, aged Pecorino, Sicilian cannoli, pastries with candied fruits, or simply as a meditative digestif to conclude a fine meal.
Particularities
A masterly interplay of a double harvest and sun-dried raisins: this Passito combines the freshness of a late harvest with the dense sweetness of traditional drying. Certified organic and harvested entirely by hand.
