Wine Description for Petit Aigle Coteaux Bourguignons Chardonnay & Aligoté AOP 2023 by Boris Champy

Colour & Appearance
A rich, luminous straw yellow with golden reflections – a wine that already signals substance and character in the glass.
Nose
The nose is seductively complex for a wine in this category: peach and mandarin meet the warm sweetness of a Tarte Tatin, underpinned by lemon pips and a hint of roasted almond. Interwoven are thyme, verbena and a fine mineral stoniness – spicy, herbaceous, utterly inviting.
Palate
On the palate, a remarkable tension unfolds: fleshy and juicy, yet threaded through with pleasantly linear acidity and subtle salinity that lend the wine freshness and length. The yeast batonnage bestows texture and body, without ever tipping into heaviness. A wine with genuine bite and vivacity.
Finish
Medium length, mineral and clean, with a pleasantly saline aftertaste and fine spice. Crisp, precise, convincing.
Terroir & Origin
The grapes come from high-altitude vineyard sites with east/south-facing exposure and a subsoil of limestone, pebbles and clay – classic Burgundian terroir that imparts the wine’s mineral character.
Grape Variety & Vinification
A blend of Chardonnay and Aligoté from young vines. Following hand-harvesting, whole bunches were pressed directly and fermented spontaneously with indigenous yeasts. Ageing took place in 65% oval concrete tanks and 35% wooden barrels over 10 to 11 months – with regular batonnage, which imparts the wine’s silky texture.
Food Pairing Suggestions
Ideal with grilled turbot, Poulet de Bresse à la crème, goat’s cheese or a classic Quiche Lorraine. Also a delight alongside seafood or a simple risotto with Parmesan.
