Wine description for AUS Pét-Nat, unsulphurised 2023 from Alta Alella

General information

Visual impression

In the glass, the wine presents itself in a delicate green-yellow colour with a gentle cloudiness, which is not a flaw but a sign of its artisanal integrity. The fine strings of pearls rise slowly, almost meditatively, and form an ephemeral wreath on the rim of the glass - an indication of the natural carbonic acid binding through the original ancestrale method.

Nose

The bouquet unfolds with remarkable precision: initially, the notes of green apple and Mediterranean herbs that characterise Pansa Blanca appear, underpinned by a subtle yeastiness reminiscent of freshly baked bread. With a little contact with the air, hints of citrus blossom, wild camomile and a salty sea breeze reminiscent of the proximity of the Mediterranean develop. The nose is characterised by a stimulating freshness that demands attention without ever being overpowering.

Palate

On the palate, the Pét-Nat shows an impressive balance between lightness and structure. With only 10.5% alcohol, it moves with a dancing elegance that is supported by a precise, finely sparkling texture. The acidity is crystal clear and invigorating without ever becoming aggressive. The flavour is dominated by notes of white pears, lemon zest and a hint of almonds, while a subtle herbal tartness and an almost salty minerality resonate in the background - a direct expression of the granitic Sauló soil.

The wine develops in the mouth with a remarkable complexity: initially fresh and tangy, then increasingly textured and surprisingly mouth-filling. The long finish reveals a fine bitterness reminiscent of citrus peel and invites you to take another sip. It is this balance of lightness and depth that makes the wine so dangerously drinkable - a bottle disappears in company with unsettling speed.

Food pairing suggestions

This unadulterated Pét-Nat is the ideal accompaniment to uncomplicated Mediterranean cuisine: Grilled sardines with lemon and olive oil bring out the savoury component of the wine wonderfully. It also harmonises light tapas like Jamón Ibérico or Pan con tomato. The lively acidity also makes it the perfect partner for fresh oysters or a simple Seafood salad. For vegetarian combinations, we recommend Grilled vegetables with romesco sauce or a classic Catalan Escalivada. The versatility of the wine also allows for bolder pairings with slightly spicy Asian disheswhose sharpness is elegantly cushioned by the refreshing perlage.
