Tasting note

Colour & Appearance
Pale golden yellow with green reflections, which despite its age still evoke the youthfulness characteristic of Grüner Veltliner.
Nose
A fascinating aromatic profile that clearly demonstrates eleven years of maturation: the primary fruit aromas have elegantly receded in favour of herbal spice and delicate waxy notes. The wine presents itself as ethereal and profound, with zesty citrus notes, stony minerality and a slightly earthy complexity that signals depth and maturity.
Palate
The entry is round and silky, almost caressing – yet then the assertive acidity of Grüner Veltliner unfolds in all its power. The spice of dried herbs, stone and lemon zest combines into a complex flavour profile, threaded through with citric notes. The balance between maturity, acidity and mineral structure is remarkable.
Finish
Long and precise, with recurring waxy notes from maturation. The finale feels complete and perfectly balanced – a hallmark of great craftsmanship.
Terroir & Origin
The grapes come from various vineyard sites in Mautern in the Wachau: warmer locations with high loess content (Silberbichl, Am Zaum) meet cooler, north-facing parcels (Bischofspoint, Weingebirge) with amphibolite and paragneiss. This diversity of terroirs lends the wine its multifaceted minerality.
Grape Variety & Vinification
Classic Grüner Veltliner in Federspiel quality (12.5% vol.). The distinctive feature: eleven years of maturation in large wooden cask before bottling in 2023 in the magnum format. This patient vinification allows for an extraordinary development of complexity and tertiary aromas.
Food Pairing Recommendations
The acidity structure and spice predestine this wine for lemon chicken with fennel salad, veal schnitzel with sautéed kale, lemon and garlic or a fennel and courgette gratin. The mineral precision harmonises beautifully with dishes that themselves feature citrus and herbal notes.
Special Characteristics
The magnum bottle (1500ml) guarantees an even slower, more harmonious development. A wine that proves Grüner Veltliner not only shines when young, but matures to extraordinary complexity with patience.
