In the glass

  1. Colour

Fine, brilliant gold with a delicate, persistent mousse.

  2. Nose

White flowers and citrus fruit, followed by ripe apple, brioche, toasted nuts and a chalky, mineral note with a spicy undertone.

  3. Palate

Creamy and full-bodied on the palate, with vibrant acidity, saline minerality and a long, precise finish — dry, dense and marked by maturation in wood with bâtonnage.

  4. Character

A mature vintage Champagne with both substance and elegance: never loud, yet multi-layered, powerful and of remarkable length.

  5. Pairing

Ideal with poached sole in Champagne sauce, Comté or aged Parmesan, as well as oysters and fine poultry.

  6. Notes

From biodynamically farmed Grand Cru plots with vines over 45 years old; maturation in wood with lees ageing provides texture and depth, whilst the magnum format allows for a particularly slow, refined development. Farmed organically since 1995 and biodynamically since 2002 — Demeter-certified since 2013.

Tasting note

Colour & Appearance
Deep, mature golden yellow with a fine, persistent mousse – the age and the magnum format paint a picture of patience and depth.
Nose
Mature aromatics of brioche, toasted almond and dried apricot, underpinned by chalk, white flowers and a subtly savoury, almost mushroom-like note that lives up to the cuvée’s name – pure umami.
Palate
Creamy and full-bodied, yet tightly structured by cool acidity. Quince zest, nuts and a saline minerality weave together into a whole that unites power and finesse. Extra Brut, but never austere.
Finish
Long, nutty-saline, with a lingering chalky note and a savoury aftertaste that persists beautifully.
Terroir & Origin
From the heart of the Côte des Blancs: Grand Cru plots in Avize, Cramant, Oger and Le Mesnil-sur-Oger. The vines are on average over 45 years old – a rarity in Champagne and a key reason for the depth of these wines.
Grape Varieties & Vinification
Chardonnay and Pinot Noir come together in a blend that is essentially fermented and aged in wood, with bâtonnage – not for oak flavours, but for texture and substance. Erick De Sousa was one of the first in Avize to champion oak casks.
Food Pairings
A champagne that belongs at the table: Parmesan, sautéed mushrooms, crustaceans in butter or pike-perch with cream sauce. Also an astonishing choice with mature hard cheese and sushi with soy sauce.
Special Features
De Sousa has been Demeter-certified biodynamic since 2013 – long before it became fashionable; some plots are still worked by horse to this day. The magnum bottle matures more slowly, lending this 2009 additional freshness and tension. A champagne of quiet character: never loud, but with so much to say.
