Pelaverga

The Piedmontese grape variety Pelaverga, more specifically the Pelaverga Piccolo native to the hills around Verduno, is a fascinating phenomenon in the wine world. Far removed from the powerful Nebbiolo tannins, this historic variety reveals a completely different, wonderfully light-hearted side. It brings pale red, translucent wines to the glass, which captivate above all with their striking, almost ethereal spice. A distinctive aroma of freshly ground white pepper, paired with bright red wild berries and delicate floral nuances, makes it unmistakable. On the palate, it shines with an animating acid structure and a fine-grained, almost weightless tannin structure that encourages the flow of drinking.

In the care of Olek Bondonio, the Giulietta is a prime example of this variety. Aged in large oak casks, this wine preserves the pure, peppery fruit and displays the fine, vibrating energy that makes Pelaverga an ideal companion for sophisticated cuisine, especially when served slightly chilled.
