- Pure Pinot Meunier (Müllerrebe) – still a rarity as a sparkling wine variety in the Palatinate. The vinification consistently follows the Champagne method: only the free-run juice is pressed, the wine matures unsulphited on the lees in barrel until summer. The must weight of 78° Oechsle provides the ideal basis for yeast autolysis. The dosage is made without added sugar, merely with a minimal amount of sulphur – Brut Nature can hardly be more consistent than this.
