Colour & Appearance
Luminous, pale straw yellow with a remarkably fine, vibrant perlage – a first indication of the meticulous handcrafted work in the cellar.
Nose
The nose is immediately captivating: earthy, primordial and threaded through with an invigorating herbal spice. With a little air, notes of rosehip and ripe damson unfold. Beneath lies a clear, almost stony minerality – the unmistakable fingerprint of old vines from the Maikammer Heiligenberg vineyard site.
Palate
On the palate, the sparkling wine reveals itself as creamy and nutty, carried by a fine spice and a pleasantly saline texture that makes the wine lively and inviting to drink. The yeast autolysis leaves its mark in a discreet brioche richness, without compromising the freshness.
Finish
Long, saline-mineral and dry – the finish is precise and clear, without any compromise. Brut Nature in its purest form.
Terroir & Origin
The grapes come from the single vineyard site Maikammer Heiligenberg in the Palatinate, from vineyards that have existed since 1999. The age of the vines ensures balanced yields and concentrated fruit. The vineyard management follows biodynamic principles – soil, the rhythm of nature and circular economy are at the heart of Steffen Mugler’s philosophy.
Grape Variety & Vinification
Pure Pinot Meunier (Müllerrebe) – still a rarity as a sparkling wine variety in the Palatinate. The vinification consistently follows the Champagne method: only the free-run juice is pressed, the wine matures unsulphited on the lees in barrel until summer. The must weight of 78° Oechsle provides the ideal basis for yeast autolysis. The dosage is made without added sugar, merely with a minimal amount of sulphur – Brut Nature can hardly be more consistent than this.
Food Pairing Suggestions
Excellent with savoury canapés, aged hard cheeses, charcuterie and salty snacks. Also an exciting choice as a companion to oysters or sushi. Or simply on its own – as an aperitif with character.
