Wine information
Biodynamic cultivation. The 20-year-old vines grow at altitudes of 550 to 650 metres on granite and sandy soil. After being harvested by hand, Grenache, Muscat and Claret are fermented in steel tanks with wild yeasts and then matured in French barriques and barrels. The wine is bottled without filtration or stabilisation. The total production amounts to 2,261 bottles.
Color
Translucent ruby red with violet reflections and a clear brightening towards the rim.
Nose
Red fruits such as redcurrant, wild raspberry and rosehip dance the round dance with elderberry rose blossom and ivy. In addition to earthy, herbal and malty notes, there is a great deal of elegance. It tickles the nose with its beguiling nature and subtle fruity sweetness and makes you curious about the first sip.
Palate
The 2021 Valdiniebla refreshes and beguiles with precisely this sweetness on the tongue, accompanied by a lively acidity and an extremely fine tannin structure. It is Burgundian and fine, inviting you to dream and indulge. The accompanying cuisine should have fruity components and the same finesse and elegance as the wine itself.
If possible, decant and serve slightly chilled.
