Abélard comes from an idyllic vineyard on Mont Ventoux. After the hand harvest, the grapes are selected twice. The result is a fruit quality of superlatives. The cuvée consists of Syrah and Grenache Noir from old vines. A small dose of the white variety Roussanne was added to the cuvée. The ageing in individual batches takes place in small oak barrels for 18 months.

Sparkling, dark cherry red, light rim and delicate violet reflections
Nose
On the nose, it immediately beguiles with plenty of serious dark berry fruit. Mulberry, raspberry and blackberry stand out. Cassis and sweet cherry come second. The fruit is countered by a fine nuance of liquorice. Dark, ethereal and inviting at the same time. An earthy nuance of beetroot adds brilliantly to the fruit. A little artichoke and cooked peppers also add vegetal accents. This has a balancing and contrasting effect at the same time. Héloise is infused with graphite and cool elements. The fruit never seems concentrated or lush, but always elegant and delicate. Hints of juniper, black pepper and a little incense provide plenty of spice. Rosemary and thyme round it off very successfully.
Palate
It continues this idea also in the aftertaste. Delicate in its fruit, juicy on the palate. It reveals both fleshy and bloody attributes. The berry fruit is kept in check by the vegetal and earthy components. It lives on finesse and elegance. Its mineral, almost salty appearance clearly raises the drinking level. Fortunately, the high altitudes of the Ventoux provide for a healthy, intact acid structure. The fine herbal spiciness continues seamlessly on the palate. The Mediterranean touch is unmistakable in the finish, where it seems nailed down.
