Tasting note
Colour & Appearance
Medium lemon yellow with a subtle green reflection.
Nose
Reveals a skilful balance between a touch of reduction and oxidation, supported by delicate wood spice and vanilla. Aromas of ripe yellow apples, pears, apricots and citrus fruits emerge, underpinned by notes of hay, cider apples and a hint of green pineapple.
Palate
Offers a pleasant richness and a ripe, extremely lively acidity. The palpable volume of white-fleshed fruit meets subtle oak integration, piquant-tart lemon zest and a fine, mineral saltiness.
Terroir & Origin
The grapes originate from the Montagne de Cras parcel in Nantoux at precisely 382 metres altitude. The cooler microclimate of the Hautes-Côtes de Beaune preserves the freshness. The soils are interspersed with pebbles (Celtic Cras), limestone, calcareous marl and clay. The vineyard site is embedded in a biodiverse ecological compensation area featuring fruit trees, hedges and wild orchids.
Grape Variety & Vinification
Single-varietal Chardonnay from extremely high-density vine rows (10,000 vines/ha). Following wild fermentation, the wine aged for twelve months in pièces (15% new oak, 35% second fill), including occasional bâtonnage on the fine lees. The producer works according to certified Demeter guidelines.
Food Pairing Recommendations
Pairs brilliantly with pan-fried turbot with lemon butter, white meat dishes or delicate poultry terrine.
Particularities
Boris Champy utilizes the cool, high-altitude sites in Burgundy as an antidote to climate change. This Chardonnay comes from Burgundy’s oldest Demeter estate and combines biodynamic viticulture with delicate structure and a racy saltiness.
