Tasting note
Character
“La Dominode” is regarded as one of the most outstanding Premier Cru vineyard sites of Savigny-les-Beaune – and in the hands of Bruno Clair, one of the most conscientious craftsmen of the Côte de Beaune, it unfolds its full potential. This wine embodies what Burgundy is in its purest form: precision, transparency and sense of place. Not a wine that seeks to impress, but one that tells a story.
Terroir & Origin
The vineyard site La Dominode lies at the southern edge of Savigny-les-Beaune, where the slopes open towards the Côte de Beaune. The soils are characterised by red, iron-rich clay over a limestone substratum – a terroir that gives Pinot Noir structure and a characteristic mineral depth. The 2023 vintage brought warm, dry conditions to Burgundy, producing ripe, concentrated wines with natural freshness – a combination that artisanal winemakers like Clair know how to exploit particularly well.
Grape Variety & Vinification
Pinot Noir in Burgundy is not merely a grape variety – it is a medium through which the soil speaks. Bruno Clair is renowned for a restrained, non-interventionist approach that places the integrity of the fruit and terroir at the forefront. The use of oak is applied judiciously to support the wine’s fine structures without overwhelming them. The result is a wine with silky texture, vibrant acidity and the elegant tannin structure typical of Savigny.
Food Pairing Suggestions
The fine structure and cool fruit depth of this wine make it an ideal companion to classical cuisine. Recommended pairings include Coq au Vin, roasted duck with cherries or lamb loin with herb crust. A mature Époisses or a Comté also form a harmonious, almost self-evident pairing with this Burgundy.
