In the glass

  1. Colour

    Salmon pink, radiant and clear.

  2. Nose

Wild raspberries, sour cherries, vineyard peach and blueberries, framed by herbal notes such as chervil and sorrel along with a finely smoky top note.

  3. Palate

Red fruit meets vibrant acidity, firm, almost powdery phenolics and silky polish – precise, elegant and with substance.

  4. Character

A serious, minerally taut rosé with a clear Pinot Noir signature that goes far beyond the classic summer wine.

  5. Pairing

Grilled salmon, goat’s cheese tart with herbs or a fine loin of veal steak.

  6. Notes

Comes from the 2.5-hectare La Noue vineyard site, partly with century-old vines; a cuvée of saignée and direct pressing of whole bunches, spontaneously fermented and aged for several months on the lees in tank and wood – with ECOCERT and BIODYVIN certification.

Tasting note

Colour & appearance
Salmon pink, radiant and clear – a brilliance that promises precision even in the glass.
Nose
Fine cascades of fruit: wild raspberry, sour cherry and vineyard peach, with blueberries behind them. This fruit is framed by spicy herbal notes – chervil, sorrel – and a lightly smoky top note that lends the wine a seductively daring character.
Palate
A rosé with a highly serious Pinot Noir signature: red fruit, finesse, substance. The filigree fruit rests within a firm, almost powdery phenolic structure with a silky polish, propelled by a vibrant nervy acidity. Precise, polished, elegant – this clearly elevates it beyond the category of summery aperitif rosés.
Finish
Minerally taut and long, with lingering herbal spice and the saline resonance of the limestone soils.
Terroir & origin
Sury-en-Vaux, a tiny hamlet in the Sancerrois – here the Riffault family has tended vines for four generations; today Stéphane runs the estate together with his wife Bénédicte. The single vineyard La Noue covers 2.5 hectares across seven parcels, with vines of varying ages up to centenary-old vines. Soils of limestone, marl and the typical white calcareous earth of Sancerre shape its mineral signature.
Grape variety & vinification
100% Pinot Noir, hand-harvested. The rosé combines a saignée portion with direct pressing of whole bunches, ferments spontaneously and matures for several months on the lees in tank and wood. This gives it depth and grip alongside all its freshness – entirely in the style of Stéphane Riffault, whose Burgundian training (Olivier Leflaive, plus years at Château Angélus) reveals itself in his fondness for texture and wood-aged clarity.
Food pairings
A rosé with substance calls for the plate rather than the sun lounger: cured salmon, grilled sea bream with fennel, tuna tataki, goat’s cheese tart with herbs or a classic Crottin de Chavignol from the home region. It also proves assured alongside veal or grilled poultry.
Special features
The domaine has been certified organic (ECOCERT) since 2016 and biodynamic (BIODYVIN) since 2017. What distinguishes this rosé is the interplay of red Pinot fruit with the cool minerality of Sancerre limestone – a rosé with special equipment that will effortlessly see you through a second evening without regret.
