Nose
The Pedra de Guix seems restrained in the nose at first. If anything, it reminds a little of ginger ale that someone has poured over dry earth and stone.
Palate
There may be restraint on the nose, but on the palate the wine is present like Edgar Selge in a one-man play. The approach is direct, uncompromising and pure. There is actually no fruit left in this wine. Do you miss it? No, not for a moment; because the Pedra de Guix plays on a completely different keyboard. The wine is extremely grippy with its tannin, the mouthfeel is determined by an almost electrifying tension, into which more and more salt mixes and combines with Mediterranean herbs of the Macchia from cool heights. Aging in used wood provides an added creamy dimension. If you are open to this style, which Dominik Huber cultivates, and give the wine its time, you will discover a great white Spaniard here.
