Pedro Ximénez stands for two completely opposing directions: on one hand, the dark, concentrated sweet wines from Montilla-Moriles and Jerez, grapes dried under the Andalusian sun until little more than sugar and essence remains. And then the dry, lighter versions – rarer, but just as compelling.
Terroir al Limit in Priorat and Victoria Ordóñez in Rueda show both sides of this grape: one with structure and minerality, the other with the concentration for which Pedro Ximénez has become famous.
