The Altesse grapes for the Quintessence d'Altesse - In Savoy, the grape variety is also called Roussette, which is why it is also known as a AOP Roussette de Savoie are pressed as whole grapes before the yeast is allowed to settle for 24 hours. The must is then transferred to used barriques, where it ferments and matures on the lees for a year.

Nose
This Altesse is already an expressive wine in its aroma, combining an alpine character with the character of the warm summer months. It smells of acacia blossom, jasmine and still slightly warm biscuit dough. There are also ripe yellow fruits, especially stone fruit, but also ripe lemons with zest, a little cinnamon and nutmeg with ripe yellow pears.
Palate
This yin and yang continues on the palate. The Quintessence offers ripe yellow fruit, a light extract and yeasty sweetness, notes of crunchy apples and pears, patisserie and a little lanolin. On the other hand, there are cooler and more tart notes of lemon zest, a ripe but present acidity and an electrifying minerality. This finally leads to a long, full-bodied, tense and salty finish.
