Wine information
The Instant Present Mondeuse undergoes a 72-hour pre-fermentation as a Macération Semi-Carboniquebefore fermenting further in concrete. It then matures for around ten months on the lees in multi-year barriques and is bottled with minimal added sulphur and without fining or filtration. The wine should be immediately present and does not require a longer maturation period.

Nose
The Instant Present Mondeuse smells of red and blackcurrants, cherry juice and a little elderberry with an overtone of violet flowers and a hint of cinnamon. It is extremely appetising, fresh and as transparent as the colour.
Palate
On the palate, the Mondeuse continues this impression of clarity and purity continued. It combines warmth and coolness, juiciness and freshness with red fruit, some pomegranate juice and red peach. The wine has substance, but despite some earthy notes remains very light and floating with a pressing acidity and polished tannin.
