These are joined by undergrowth, a hint of cinnamon and aniseed – a complex, somewhat smoky aromatics that requires time and air to unfold.

- Spätburgunder cultivated according to organic and biodynamic principles of permafrost viticulture. Spontaneous fermentation in open stainless steel fermenters, maturation over two winters in used large and half-large oak casks. Deliberately reductive style, without chaptalization, only minimally sulphited before bottling – uncompromisingly natural.

- Pairs excellently with wild fowl, duck breast roasted rare, venison loin with mushrooms or aged Comté. Also an elegant choice with lamb rack with herb crust.
