Information around wine
The grapes of the Vorgrimmlers come from the Tuniberg, a Jurassic limestone fault plate that folded up there during the formation of the Upper Rhine Graben. On top of the Jurassic limestone lies a layer of loess of varying thickness. The grapes are harvested by hand, partially destemmed and slowly fermented. The wine matures for about 20 months in used barriques. Only at bottling time do the Vorgrimmlers add minimal amounts of sulphur to the wine, bringing it to between 30 and 40 mg of total sulphur. It is bottled without any additives and fining with only very coarse filtration.
Colour
quite transparent brick red
Nose
Vorgrimmler's Pinot Noir 2019 is fragrant from the outset and is reminiscent of a mixture of nuts, plums wrapped in bacon, herbs and a ladleful of dark earth. There are also ripe, juicy and dried cherries with a hint of wood and yeast.
Palate
On the palate, this is a classic Pinot Noir with dark, dried fruit, some fermented tobacco and cardamom, again some bacon, herbs and earth. The Pinot has a firm structure with a fine grip, lively acidity and a sweet centre. Overall, however, it is herbaceous and tart with a slight salinity on the finish.

- Ox cheeks with black salsify puree and savoy cabbage
- Gnocchi and Jerusalem artichokes tossed in sage butter
