Colour
Transparent, luminous ruby red – a rosé in the style of a claret, noticeably darker than classic rosé wines.
Nose
A juicy blend of red and dark berries, cherry clafoutis with flaked almonds, accompanied by subtle wood and a hint of lavender.
Palate
Juicy and sensual with fresh red berry and cherry fruit, fine yeast notes, a silky texture and little tannin; the finish is highly drinkable and crisp.
Character
Not a classic rosé, but rather a light red wine with intense fruit – charming, inviting and ideal to enjoy in generous sips.
Pairing
Beetroot salad with raspberries and lime, merguez with hummus, or naan with spiced minced lamb and yoghurt dip.
Notes
Following the solera principle, vintages 2017 to 2022 are blended here into a single wine that smooths out the weather extremes of individual years; fermented and aged in 500-litre oak and acacia tonneaux, with only 30 mg/L total sulphur – from the Demeter-certified pioneer estate that has farmed organically since 1984.

Colour & appearance
Transparent, luminous ruby red – unusually deep for a rosé, more in the style of a claret. Anyone expecting salmon pink here will be pleasantly surprised.
Nose
Juicy and inviting: red and dark berries, alongside cherry clafoutis with flaked almonds, a discreet woody note and a hint of lavender. Even on the nose, this wine whets the appetite.
Palate
A light red wine dressed as a rosé: intense yet buoyant, with very little tannin. Fresh red berry and cherry fruit, fine yeast notes, silky texture. At 12.0% ABV, everything remains effortlessly drinkable.
Finish
Moreish, crisp and fresh, with a final burst of red fruit. A wine that empties the glass more often than you planned.
Terroir & origin
The grapes come from the Steinthal vineyard site around Velm-Götzendorf in the south-eastern Weinviertel. The estate’s 23 hectares lie on limestone-sandstone soils; trees and shrubs on the eastern sides of the vineyards serve as natural climate buffers. Demeter-certified, with sheep grazing between the vines and home-grown herbs used for vineyard treatments.
Grape variety & vinification
Rösler, Sankt Laurent and Syrah – an unusual trio. The Rösler is pressed as whole bunches, the Syrah from the years 2017 to 2022 was fermented on the berries, and the Sankt Laurent comes from 2017 to 2021. Fermentation and maturation in 500-litre oak and acacia tonneaux as well as in a solera system of wooden casks and stainless steel – vintages merge, weather extremes are smoothed out. Bottled in March 2023 with just 30 mg total sulphur.
Food recommendations
Its fresh, berry-driven character calls for aromatic, not overly heavy dishes: beetroot salad with raspberries, cherries and lime, merguez with hummus or naan with spiced minced lamb and yoghurt dip. Enjoyed on its own on the terrace, it is also a serious alternative to the usual rosé monotony.

A rosé without a vintage, but with a story: following the solera principle familiar from sherry, it unites several vintages into one wine that expresses the terroir rather than the whims of a single summer. Part of Johannes Zillinger’s Revølutiøn line; after his trip to Georgia in 2011, he radically restructured the estate – today, over 60 per cent of his wines are made in amphorae and large wooden casks. This wine proves that Demeter and minimalism need not taste demanding, but simply delicious.
