Colour & Appearance
Transparent, luminous ruby red – a rosé in the style of a classic Claret, deliberately setting itself apart from conventional rosé mainstream. The colour already reveals it: this is no ordinary summer wine.
Nose
Juicy and seductive, the nose presents an appetising medley of red and dark berries, cherry clafoutis with almond slivers, a hint of lavender and subtle oak notes. The aromatics feel complex, yet never intrusive.
Palate
On the palate, the true character of this unconventional wine unfolds: light in tannin, yet intense in expression. Fresh red berries and cherry fruit dominate, carried by a silky texture and subtle yeast notes. The solera ageing lends the wine remarkable depth and complexity. Juicy, sensual, with a charm that’s hard to resist.
Finish
Quaffable and subtly crisp-fresh – a finale that invites the next sip.
Terroir & Origin
The grapes hail from the Steinthal vineyard site in the Weinviertel, where Zillinger works biodynamically and uncompromisingly pursues quality.
Grape Variety & Vinification
An unusual cuvée of Rösler, Sankt Laurent and Syrah. The Rösler was pressed as whole bunches, the Syrah (vintages 2017–2022) fermented on the berries, the Sankt Laurent (2017–2021) aged in the solera system. Maturation in 500-litre tonneaux of acacia and oak. With just 30 mg total sulphur and 12% alcohol, a textbook example of natural, unmanipulated winemaking.
Food Pairing Suggestions
Perfect with beetroot salad with raspberries and cherries, merguez with hummus, naan with spicy lamb mince or other spicy, aromatic dishes from Mediterranean and Oriental cuisine.
