Info about the wine
Biodynamic viticulture, 60-year-old vines grow at 750 and 900 metres above sea level.
After hand-picking, the wine is fermented in large wooden barrels with wild yeasts and matured in French barriques and foudres. Bottling takes place without filtration or stabilisation. The production volume is 3,800 bottles.
Color
Sparkling, slightly cloudy ruby red with violet reflections and brightening towards the rim.
Nose
The 2021 Sotorrondero shows the pure dark berry fruit of cassis, blackberries, fragrant, sun-warmed wild raspberries and blueberry muffins. After sufficient aeration, intense notes of rosemary, thyme and wild sage are accompanied by roses and violets. There are also hints of cinnamon and juniper, as well as delicate earthy flavours and a beguiling minerality that underlines its multi-layered character and gives it freshness on the nose.
Palate
It flows most beautifully over the tongue when slightly chilled, revealing its wonderful fruity side with bravura. The refreshing acidity and invigorating, fine-grained tannin structure give it wings and leave the taster wanting more. It has earthy depth and finesse on the palate at the same time.
If possible, decant and serve slightly chilled.
