Information
The Beaune comes from Village sites in Beaune from 30-year-old vines located at 220 to 250 metres. Hand harvesting was followed by partial destemming and spontaneous fermentation in stainless steel cuve and a blend of Pigeage and ReassemblyThis is a process of punching down and overflowing of the grape marc. Malolactic fermentation took place spontaneously in the barrels. The wine was aged for ten to twelve months in a mixture of 228-, 350- and 500-litre barrels.Barriques and in Tonneaux, of which a maximum of 10 % are replaced annually. The wine was tasted daily and the barrels were drawn off when Frédéric Buisson deemed it appropriate. It was fined with bentonite and filtered only very coarsely. Sulphur was only added at bottling with a maximum of 40 to 50 mg/l total sulphite.

Nose
The Beaune 2021 initially smells mainly of undergrowth with lots of dry branches and leaves. Then you become aware of the fruit, which is more on the dark berry side, offering notes of black cherries, a few sour cherries and cherry stones and also a slight hint of cherry cream on a dark biscuit base.
Palate
On the palate, the Pinot Noir seems silkier than expected, and it is actually a pleasure to let it glide over the tongue, because behind the silkiness, there is more tannin and structure than one would expect at first. It is a pleasantly firm wine from Beaune that offers power and substance, is fleshy, juicy and pleasantly acidic, and overall appears pure and straightforward.
