Wine Description for Athénaïs Côte d’Auxerre „Céleste“ AOC 2020 from Château de Béru
- Colour & Appearance
- Luminous, vibrant ruby red with charming violet reflections that underscore the youthfulness of this Pinot Noir.
- Nose
- An enchanting play of aromas unfolds with sour cherry, rhubarb and hibiscus. Behind this emerges a seductive berry bouquet: blueberries, lingonberries and raspberries in concentrated form. Fresh herbal notes of lemon balm and sorrel lend the wine an invigorating liveliness, whilst white pepper with its cedary-citric facets provides aromatic complexity.
- Palate
- On the palate, the Céleste reveals its most hedonistic side: the profound, cathedral-like fruit fullness envelops you immediately. Delicate floral notes of hollyhock and hibiscus dance with fine-meshed, densely woven tannins that provide structure without ever becoming intrusive. This wine is pure drinking pleasure – unpretentious, spontaneous, with uninhibited drinkability. Exactly what Burgundian Pinot Noir should be: elegant and at the same time uncompromisingly pleasurable.
- Finish
- Persistently fruity with fine spice and lively acidity that invites the next sip.
- Terroir & Origin
- The grapes come from Saint-Bris in the Côte d’Auxerre, planted between 210 and 250 metres altitude on characteristic Kimmeridge limestone with high clay and limestone content. The vineyard sites with eastern, southern and south-western exposure lend the wine its particular freshness and mineral depth.
- Grape Variety & Vinification
- 100% Pinot Noir, vinified as whole-bunch fermentation with natural yeasts in conical vats. Gentle extraction over two to three weeks and subsequent 12 to 18-month maturation in Burgundian pièces result in a wine of impressive balance at moderate 12% alcohol.
- Food Pairing Recommendations
- Perfect with Coq au Vin, duck breast with cherry sauce, grilled tuna or mushroom risotto. Also excellent with soft cheese such as Époisses or simply on its own as an aperitif.
- Special Features
- Part of the Négociant line from Athénaïs de Béru, which stands for authentic, terroir-driven wines from northern Burgundy. A wine that proves great Burgundian wines need not be expensive.
