Wine information
The vineyard was still in conversion to organic farming at the time of harvest. In 2021, the certification was completed. 100 % Savagnin grapes were harvested by hand and fermented spontaneously in both oak barrels and temperature-controlled stainless steel fermenters. The ageing took place in used oak.
Color

Nose
The En Guille Bouton offers a fragrant and fresh nose of green and yellow apples, yellow pears and some crisp peach. Above this are notes of white flowers such as hawthorn. In addition, there is some fennel green and graphite.
Palate
On the palate the En Guille Bouton more powerful than the nose would suggest. It is a wine full of energy with a lot of tension and intensity, but always remaining in the bright crisp range. Citrus notes, again crunchy stone fruit notes, some almonds and a hint of nuts characterise the wine. The texture is slightly creamy, almost buttery, without being heavy, in addition to the clarity and nervousness of acidity so typical of Jura. However, one senses the warmth and maturity of the wine. The used wood leaves a pleasantly restrained impression. In the finish, a spicy note reminiscent of zest remains present for a long time.
