Wine information
The blanc de blancs is a cuvée of three typical Franconian grape varieties Kerner, Müller-Thurgau and Riesling. After the harvest, the grapes for the sparkling wine were pressed as whole grapes. The three basic wines were matured separately, and only after fermentation was complete was the cuvée created. Biological acid reduction was avoided here. The sparkling wine base was bottled at the end of 2018 and was allowed to mature on its lees for 36 months. The sweetness is 3.4 grams.

Nose
The blanc de blancs shows a few reductive notes at the beginning, somewhat reminiscent of rubber, but this fades away quite quickly. Then the sparkling wine opens up and offers notes of yellow and red apples, but also of yellow-fleshed fruits. In addition, there are hints of yeast, nuts and nougat.
Palate
Also on the palate, the blanc de blancs slightly nutty and yeasty, impressively spicy and punchy with an appealing acid bite and chalky texture. There is a little salt in the finish and the sparkling wine lingers long and intensely on the palate with an aftertaste of extract.
