Wine Description for Vermut Celestial by Wachisnais

Colour & Appearance
Deep ruby red with violet and brown reflections – a colour depth that already hints at the complexity of this extraordinary vermouth.
Nose
An aromatic fireworks display of herbal intensity: eucalyptus, mint, thyme and rosemary dominate the first wave. Then fennel, anise and liquorice unfold in fascinating harmony. Bitter orange and grapefruit bring freshness, whilst cinnamon and clove add spicy accents. The medicinal character evokes sage sweets, underpinned by caramel. With time, raisins and dates develop, accompanied by liquorice, dark chocolate and cocoa butter. Black pepper, juniper berries and cranberry form the final olfactory chord.
Palate
Mouth-filling and of impressive elegance. The vermouth unfolds a silky mouthfeel with present grip. Cocoa butter, dark chocolate and amarena cherry dance playfully across the tongue. Despite the 15.5% alcohol, it feels remarkably light and graceful, enveloping the palate completely. The balance between fruity playfulness and herbal structure is masterful. Spekulatius and gingerbread linger long afterwards.
Finish
Remarkably long and clearly defined. The festive spice notes of spekulatius and gingerbread remain present, carried by silky texture and elegant structure.
