Wine Description for Ambre Rouge Pinots Macere 2021 by Trapet Alsace

Colour & Appearance
A luminous Campari red in the glass – a fascinating hue that already announces the unconventional winemaking method of this wine. The colour shifts between pink and orange, a visual hint at the skin fermentation.
Nose
Initially restrained, almost closed. With patience, barberry and redcurrants reveal themselves, along with apple skins – an aromatics that evokes stone rather than fruit. Wet gravel and lichen dominate, a tannin-driven minerality characterises the bouquet. This wine demands time and attention.
Palate
Here the transformation occurs: the wine opens up, becoming complex and elegant. The stony coolness gives way to warm fruit of ripe raspberries, wild strawberries and a hint of blood orange. The texture is silky, almost caressing, threaded through with a cool mineral vein. A fine but present tannin envelops the fruit like a silk glove over an iron fist.
Finish
Gripping and bone-dry, with remarkable density and length. The tannin gives the finale structure and grip – a wine that lingers.
Terroir & Origin
The grapes come from the Grand Cru Sonnenglanz, from vines that Pierre’s grandfather planted. A terroir that brings minerality and depth into the bottle.
Grape Variety & Vinification
Pinot Gris with small portions of Auxerrois, fermented on the skins – an orange wine technique that gives this Alsatian its distinctive personality. Skin fermentation extracts tannins and colour compounds from the skins, lending the wine structure and complexity.
Food Pairing Recommendations
A versatile companion: salad of duck aiguillettes with warm liver pâté and walnut oil vinaigrette, lobster in butter with pink peppercorn and black truffle, or grilled octopus on aubergine caviar. The tannin structure pairs well with both rich poultry dishes and the texture of seafood.
Special Characteristics
A Pinot macéré that blurs the boundaries between red, white and orange wine. At 14% alcohol, powerful yet never heavy. A wine for the curious and adventurous.
