Wine profile
With s e m i c o l o n as their background, Katharina Salzgeber and Nikolaus Saahs are using their talents to explore the previously unproven in Gewürztraminer and Riesling. They are investigating how these wine varieties change when they vary in harvest time, processing and ripening. With the same flexibility and creativity that the semicolon offers in grammar, this wine sheds its rigid rules and invites the connoisseur to a sustained tasting experience.
Wine production
This wine is made from a combination of 30 % marc and 70 % must and is aged in used wood for ten months. This method gives it a natural character, as there is no clarification, stabilisation, filtration and no sulphur is added.
Colour train
The colour of this Riesling is a deep golden yellow.
Fragrances
The 2020 Riesling semicolon exudes an authentic and intense fragrance. Its bouquet is characterised by dried meadow herbs, apple, apple peel and wine yeast, which entice it to open and unfold in a carafe. With the addition of oxygen, additional fruity notes of quince and floral notes of honeysuckle, chamomile and elderflower are added.
Taste
The taste is precise, dry with a yeasty-spicy note. This sophisticated palate reveals a whole new way of creating wine. Its refreshing style combines ideally with purist, natural and herb-influenced cuisine.
Food recommendations
Try it with a mushroom quiche and rocket pesto, or with crostini with celery remoulade, salmon, goat's cheese and orange thyme. Stuffed bread dumplings with roasted meadow hogweed, sun-dried tomatoes and minced lamb are also a great match.
