Overview of the wine
This characteristic Sancerre from Domaine Vacheron draws its essence from all three terroirs that Sancerre has to offer: Silex, Caillottes and Terres Blanches. It is made from spontaneously fermented Sauvignon Blanc and then matured in stainless steel.
Colour scheme
The glass reveals the light of pale straw yellow, offset with subtle greenish hues.
Fragrance profile
Over the years, this Sancerre has acquired its fine-tuned refinement and finesse, while always remaining an authentic Sancerre. It stands out for its freshness, juiciness and aromatic profile, while at the same time coming across as light-hearted and cheerful, yet no less sophisticated. The bouquet reveals notes of white currants and kiwi, mingled with traces of mirabelle plums and limequats, joined by a juicy mix of green and yellow kiwis, rounded off with a hint of chalk dust.
Taste
On the palate, the Sauvignon Blanc reflects the delicacy and expressiveness of its fragrance. Fresh and juicy green, partly white-fleshed fruits are the dominant flavour element. There are also aftertastes of oats on damp stone. The wine offers exactly the dose of lively mineral acidity that one expects from a Sancerre of this type.
Recommended food accompaniments
This Sancerre is perfect with a selection of dishes such as spaghetti with toasted almonds, olive oil and young pecorino. Or with a generous platter of sashimi. Finely steamed fennel with a sauce of sheep's milk-based yoghurt, apple and mint would also harmonise wonderfully.
