Colour & Appearance
Luminous straw yellow with fine, persistent mousse. The perlage displays itself elegantly and delicately – a visual harbinger of the finesse contained within this Champagne.
Nose
A textbook Blanc de Blancs that immediately impresses with its chalky minerality and citric precision. Notes of lemon curd, yellow plums and pear tart with vanilla unite with hints of white nougat, cinnamon and warm buttered toast. The nose shifts between cool elegance and seductive opulence – a fascinating balance.
Palate
On the palate, pure sensuality unfolds. The silky-creamy mousse combines congenially with the subtle dosage of 5 g/l and ripe yellow fruit. The reduced pressure of 4.5 bar lends this Champagne an extraordinary creaminess, whilst the Grand Cru terroir provides powerful minerality and vibrant acidity. Terroir & Origin
The grapes come from vines at least 40 years old from the prestigious Côte des Blancs villages of Chouilly, Cramant, Avize, Oger and Mesnil-sur-Oger – the who’s who of Chardonnay terroirs in Champagne.
Grape Variety & Vinification
100% Chardonnay from old vines, hand-harvested and processed in a traditional Coquard press. Spontaneous fermentation partly in stainless steel, partly in 600-litre Burgundy demi-muids. Spontaneous malolactic fermentation, 6–18 months base wine ageing, followed by 24–36 months on lees. Blend of two vintages plus 30% Solera reserve (since 2013). Unfiltered, unrefined – craftsmanship at the highest level.
Food Pairing Suggestions
Toast with scrambled eggs, Crème de Bordier and salmon roe, noodles from the wok with pak choi, prawns and chicken, salad of fennel, avocados and green asparagus with lemon-ginger dressing. Also excellent with scallops or lobster with butter.
