Info about the wine
Biodynamic cultivation. The 70-year-old vines grow at an altitude of 900 metres on granite and sandy soil. After manual harvesting, the wine is fermented in steel tanks with wild yeasts and then matured for 20 months in French barriques and barrels. The wine is bottled without filtration or stabilisation. The total production amounts to 1,200 bottles.
Color
Dense and deep purple, almost colour-tight to the rim.
Nose
The nose of the 2021 Ataulfos captivates with a wonderful intensity of cassis, sweet blueberries, mocha, cinnamon and cardamom. Dark, mystical and inviting - an invitation to dive in. In addition to the subtle sweetness, it has plenty of roasted flavours and clear notes of rosemary, juniper and thyme.
Palate
The palate is salty, complex and multi-layered, the youthful tannin structure and acidity invigorate and challenge, the finish is long and indicates its very good ageing potential. Truly a profound and extremely exciting wine, perfect with strong cuisine with concentrated sauces.
Be sure to decant and enjoy from large glasses.
