Information about the wine:
The 60-year-old Monastrell vines are planted in six different locations on Ibiza around San Agustín and San José on sandy soils not far from the sea. After the harvest there is a cool pre-fermentation. 90 % of the grapes are destemmed. The spontaneous fermentation as well as the aging take place in French wood.
Color:
dark garnet red with violet reflections
Nose:
The nose reveals a ripe but still young wine that initially opens with a note of fresh bread dough. Above that are dark, rich blackberry notes, some beetroot and black chocolate. There is toasted wood as a base. Despite the maturity, a cool note already shows in the aroma.
Palate:
In the mouth, the Ibizkus Tinto 2016 offers a lot of black fruit and a sweet fruit core. Here, too, blackberries as well as black cherries and some elderberry can be found. The tannin is firm and grippy, the new wood well integrated. At the same time, a pleasantly fresh, lively acidity and a discreet minerality pervade the wine, which still seems quite youthful.
