- The vineyard site Croix Sorine borders La Maladière Premier Cru to the north-west and benefits from similar exposure. Although vinified from purchased grapes, these come exclusively from organically certified (Ecocert) and biodynamic (demeter) parcels – quality without compromise.
- Grape Variety & Vinification
- 100% Pinot Noir, hand-harvested and partially destemmed. Spontaneous fermentation in stainless steel vats with traditional pigeage and remontage. Spontaneous malolactic fermentation and 10-12 months ageing in a carefully considered blend of 228-, 350- and 500-litre barrels with a maximum of 10% new oak. Minimal fining with bentonite, coarse filtration, only 40-50 mg/l total sulphites – natural winemaking with a deft touch.
