Colour & Appearance
Medium, slightly translucent carmine red – a classic Burgundy dress that already hints at the elegance and finesse of the vintage in the glass.
Nose
Complex, multi-layered aromatics with sweet and sour cherries, cranberries and raspberries, complemented by blood orange zest. Floral notes join in, along with mineral hints of stone, a touch of iron, tobacco and undergrowth – a tonic mixture that unites freshness and depth.
Palate
Serious and concentrated, this Saint-Romain presents itself with remarkable pressure and structure. The balance between fruit, acidity and slightly grainy tannin is well-achieved. You sense a certain warmth that is counteracted by cool mineral notes. The texture shows subtle yeast notes, whilst the wine becomes increasingly sensual and accessible with air – a refined, characterful Pinot Noir.
Finish
Dry and persistent with lingering cherry notes and mineral freshness.
Terroir & Origin
From the vineyard site Combe Bazin in the south-eastern part of the appellation towards Auxey-Duresses. The south-east facing vineyards lie at 375 to 385 metres altitude over white limestone soil (Calcosol sur marne de Saint-Romain) – a terroir that lends the wine its mineral precision. The 30-year-old vines produce concentrated, characterful grapes.
Grape Variety & Vinification
Pinot Noir, hand-harvested and partially destemmed. Spontaneous fermentation in stainless steel tank with pigeage and remontage, followed by spontaneous malolactic fermentation. Maturation over 10 to 12 months in a blend of barriques (228, 350 and 500 litre) as well as tonneaux, of which a maximum of 10% new. Daily tasting and selective racking. Bentonite fining, coarse filtration, minimal sulphiting (40-50 mg/l) only at bottling. The estate is Biodyvin-certified.
Food Pairing Suggestions
Excellent with oxtail with butter beans, suckling pig terrine with apricots and rosemary or braised peppers with beans and orzo. Also an excellent choice with duck breast, Coq au Vin or aged Comté.
