About the wine
This exquisite drink comes from vineyards planted with 30-year-old vines on pink granite of the Poncié growing area. The south-western slope favours the formation of small grapes. The use of ZEN "carbonique" maceration accompanies the maceration for 10 days, followed by a final fermentation and ageing in eight-year-old oak barrels.
Colour scheme
With its translucent cherry red hue and glimpses of ruby reflections, this wine is a feast for the eyes in the glass.
Fragrance profile
The complexity of the aromas is impressive. Tones of wild raspberry and red currant mingle with ethereal notes of ivy, violet and tarragon. Nuances of tree bark, liquorice and green pepper round off the aromatic experience. Already in the first nose tasting, the wine entices with a refreshing and cool style that stimulates the sensual journey to the first sip.
Taste experience
The 2021 Fleurie Climat "Poncié" moves eloquently and fruit-driven on the palate. The tannin structure is exquisitely mild, supported by an elegant and energising acidity. A fine fruit sweetness creates an enticing effect. A sip of this wine is pure pleasure and is ideally served slightly chilled from Burgundy glasses.
Accompanying food recommendations
This wine harmonises excellently with a vegetable quiche of pumpkin and tomatoes or a selection of the finest charcuterie. A fine rabbit stew with tomatoes, artichokes, celeriac and garlic is also a suitable culinary partner for this expressive drop. Alternative suggestions could include a wild mushroom risotto or a creamy guinea fowl breast fillet with red wine jus.
